Popovers! Popovers! Popovers!

I used to live on popovers! Exactly a year ago, when the twins were teeny-tiny things and we were so overwhelmed with keeping up with their not so tiny needs, Val would get us breakfast from the neighborhood cafe and would get me an earl grey latte and a popover every single day. I don’t know what is it about these super simple breads, but I can’t get enough of them!
So I finally decided to try making them myself. And what do you know?! Turns out, it’s super easy!

  • 1 1/4 cup of all-purpose flour
  • 1 1/4 cup of milk
  • 1/2 teaspoon of salt
  • 3 eggs 
Preheat oven to 450 F.
Butter 6 custard cups (I think, muffin tin will work as well).
Combine the first three ingredients, then add eggs, one at a time, beating well after each addition.
Divide the mixture evenly between custard cups (approx. 3/4 full). Place cups on baking sheet.
Bake at 450 F for 25 minutes. Then reduce the temperature to 350 F and bake for another 15 minutes.
(Next time, I’m taking them out after 10 minutes at 350 F)
